Spicy Mexican Dinner Puerco en Salsa Verde

Ingredients:

  • 2 lbs pork shoulder, cut into chunks
  • 12 tomatillos, husked and rinsed
  • 2-3 jalapeños, depending on your spice tolerance
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup cilantro, chopped
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions:

  1. In a large pot, heat the vegetable oil over medium-high heat. Add the pork chunks and season with salt and pepper. Sear the pork on all sides until browned.
  2. Remove the pork from the pot and set it aside.
  3. In the same pot, add the chopped onion and stir until it becomes translucent. Add the minced garlic and cook for an additional minute.
  4. While the onions and garlic are cooking, prepare the salsa verde. Place the tomatillos and jalapeños in a pot of boiling water and cook for about 5 minutes, or until softened. Drain and transfer them to a blender.
  5. Add the cooked onions, garlic, cilantro, and cumin into the blender with the tomatillos and jalapeños. Blend until smooth. Taste and adjust seasoning if necessary.
  6. Return the seared pork to the pot and pour the salsa verde over it. Add chicken broth to cover the meat. Bring to a simmer.
  7. Cover and let it cook on low heat for about 2 hours, or until the pork is tender and easily shreds with a fork.

Serving Suggestions:
