How to Make a Mexican Spicy Lentil Soup

  • 1 bell pepper (red or green), chopped
  • 2 medium tomatoes, diced
  • 4 cups vegetable or chicken broth
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1-2 jalapeño peppers, minced (adjust based on spice preference)
  • 1 cup corn (fresh, frozen, or canned)
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

Step 1: In a large pot, heat the olive oil over medium heat. Add chopped onions and minced garlic, sautéing until the onions become translucent.

Step 2: Add the diced carrots and chopped bell pepper to the pot. Stir and cook for about 5 minutes until they start to soften.

Step 3: Incorporate the diced tomatoes, jalapeño peppers, ground cumin, and smoked paprika. Stir well and cook for another 2-3 minutes to allow the spices to become fragrant.

Step 4: Add the rinsed lentils and broth to the mixture, stirring everything together. Bring the soup to a boil over high heat, then reduce the heat to low and let it simmer uncovered for about 25-30 minutes, or until the lentils are tender.

Step 5: If using corn, add it to the pot during the last 5 minutes of cooking. This will give it time to heat through without losing its crunch.

Step 6: Season the soup with salt and pepper to taste. Feel free to adjust the spiciness by adding more jalapeños if desired.
