Instructions

Step 1: Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes, or until it becomes translucent.

Step 2: Stir in the minced garlic and diced jalapeño pepper and cook for an additional 2 minutes, stirring occasionally to prevent burning.

Step 3: Add the diced butternut squash, cumin, and chili powder to the pot. Stir well to combine all the flavors. Cook for about 3-4 minutes.

Step 4: Pour in the vegetable broth and the can of diced tomatoes (with juice). Bring the mixture to a boil, then reduce heat and let it simmer for 20-25 minutes, or until the squash is tender.
