Quick Mexican Dinner Empanadas with Lean Meat

Instructions:

Step 1: Prepare the Filling

In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and bell pepper, cooking until softened, around 5 minutes. Stir in the minced garlic, ground cumin, and chili powder, cooking for an additional minute to release the spices' fragrance.

Next, add the lean meat to the skillet, season with salt and pepper, and cook until browned. Make sure to break up any large chunks of meat while cooking. Once cooked through, remove from heat and let it cool slightly.

Step 2: Assemble the Empanadas

Preheat your oven to 400°F (200°C). On a clean surface, lay out one round of empanada dough. Place about 2 tablespoons of the meat mixture in the center of the dough. Fold it in half, creating a half-moon shape, and press the edges together to seal. For a decorative touch, crimp the edges with a fork.

Repeat until you’ve filled all the dough rounds. Place the empanadas on a baking sheet lined with parchment paper.

Step 3: Bake

Brush the tops of the empanadas with the beaten egg to give them a beautiful golden color when baked. Bake in the preheated oven for 20-25 minutes or until the empanadas are golden brown and crispy.

Freezing Empanadas:
