How to Make Mexican Breakfast Tamales from Scratch

Making Mexican breakfast tamales from scratch is a delightful culinary experience that involves a blend of flavors and textures. Tamales are traditionally made using masa (corn dough) filled with a variety of ingredients, and they are often enjoyed during special occasions or festive gatherings. Follow this guide to create your own delicious breakfast tamales at home.

Ingredients for Tamale Dough

To make the masa for your tamales, you will need:

  • 4 cups masa harina
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup vegetable shortening (or lard)
  • 3-4 cups chicken or vegetable broth

Ingredients for Filling

Your choice of filling will determine the flavor of your tamales. Here are some popular breakfast fillings:

  • Scrambled eggs with cheese and bell peppers
  • Chorizo with onion and jalapeños
  • Refried beans with cheese and avocado

Instructions for Making Tamales

1. Prepare the Dough

In a large mixing bowl, combine masa harina, baking powder, and salt. In another bowl, cream the vegetable shortening until light and fluffy. Gradually add the masa mixture into the shortening, alternating with chicken or vegetable broth. Mix until a smooth and pliable dough forms.

2. Prepare the Filling

While the dough is resting, prepare your filling of choice. For scrambled eggs, cook them in a skillet with cheese and bell peppers until fully cooked. If using chorizo, cook it in a pan with onions and jalapeños until browned. Let the filling cool slightly before assembling the tamales.

3. Soak the Corn Husk

Soak dried corn husks in warm water for about 30 minutes until they are pliable. This will make it easier to wrap your tamales.

4. Assemble the Tamales

Take a soaked corn husk and spread about 1/4 cup of masa dough onto the center of the husk, leaving about 1 inch at the bottom and 1.5 inches at the sides. Place 1-2 tablespoons of your filling in the center of the masa. Fold the sides of the husk over the masa and filling, then fold the bottom of the husk up to secure it. Repeat this process until all dough and filling are used.

5. Steam the Tamales

Set up a steamer pot and fill it with water. Place the tamales upright in the steamer basket, with the open end facing up. Cover the tamales with a wet cloth or extra corn husks to prevent the steam from escaping. Steam the tamales over medium heat for about 1 to 1.5 hours. The tamales are done when the masa easily pulls away from the husk.

6. Serve and Enjoy

Once cooked, remove tamales from the steamer and let them cool for a few minutes. Serve them with your favorite salsa or hot sauce for an authentic Mexican breakfast experience. Enjoy your homemade tamales!

Tips for Perfect Tamales

  • Ensure your masa is well-mixed and fluffy for a light texture.
  • Experiment with different fillings to customize your tamales to your taste.
  • For a spicy kick, add diced jalapeños or hot sauce to your filling.

Making Mexican breakfast tamales from scratch may take some time, but the joy of enjoying them with family and friends is well worth the effort. Get creative with your ingredients and savor this delicious dish!
