  • 2 bolillos (Mexican white rolls)

Instructions

Step 1: Prepare the Bolillos

Start by preheating your oven to 400°F (200°C). While the oven is heating, take the bolillos and slice them in half lengthwise. It’s important to not slice all the way through—just enough to open them up like a book.

Step 2: Toast the Bread

Spread a little butter or drizzle some oil onto the cut sides of each bolillo half. This will help them get crispy and golden when toasted. Place the bolillos cut side up on a baking sheet and put them in the preheated oven. Toast them for about 5-7 minutes or until they are lightly browned.

Step 3: Add Refried Beans

Once the bolillos are toasted to your liking, remove them from the oven and spread a generous layer of refried beans on each half. You can either use canned refried beans or make your own for an authentic touch.

Step 4: Top with Cheese

Sprinkle a handful of shredded cheese over the refried beans. If you prefer a gooey texture, use a combination of cheeses. Mozzarella is a great addition for that perfect melt. Return the bolillos to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbling.

Step 5: Serve and Enjoy

Once the cheese is melted to perfection, remove the molletes from the oven and let them cool for a minute. Top with pico de gallo or your favorite salsa for an extra burst of flavor. You can also garnish with chopped cilantro for an added touch of freshness.
