Follow these steps to make delicious Mexican breakfast enchiladas:

Step 1: Prepare the Filling

In a large skillet, heat a small amount of oil over medium heat. Add the diced onions and sauté until they become translucent. Next, add the chopped spinach or kale and cook until wilted. If you're using chicken, add it to the mixture along with the black beans.

Step 2: Cook the Eggs

In a bowl, whisk the eggs, and season them with cumin, salt, and pepper. Pour the eggs into the skillet with the vegetable mix and cook, stirring gently until the eggs are fully cooked but still moist. Remove from heat and set aside.

Step 3: Prepare the Tortillas

In another skillet, lightly toast the corn tortillas for about 30 seconds on each side until they are warm and pliable. This will make them easier to roll without breaking.

Step 4: Assemble the Enchiladas
