Instructions

Step 1: Prepare the Sauce

In a medium skillet, heat a tablespoon of oil over medium heat. Add the chopped onions and bell peppers, sautéing until they become tender. Next, add the minced garlic and jalapeños, stirring for an additional minute.

Then, add the chopped tomatoes to the skillet. Cook the mixture until the tomatoes soften and release their juices, about 5-7 minutes. Season with salt and pepper to taste. Once the sauce is ready, reduce the heat and let it simmer while you prepare the eggs.

Step 2: Cook the Eggs

In another skillet, heat a tablespoon of oil over medium heat. Crack the eggs into the skillet, cooking them sunny-side up or to your preferred doneness. Season with a pinch of salt and pepper.

Step 3: Prepare the Tortillas

In the same skillet where you cooked the eggs, lightly fry the corn tortillas for about 30 seconds on each side until they are warm and slightly crispy. Alternatively, you can warm them in a microwave or on a dry skillet.
