How to Make a Mexican Elote-Inspired Salad

Mexican Elote, also known as street corn, is a popular and flavorful dish enjoyed by many. This elote-inspired salad captures the same essence as the traditional ear of corn, but in a refreshing salad version. Perfect for barbecues, picnics, or as a side dish at dinner, this vibrant salad is easy to make and offers a burst of flavor with every bite. Here’s how to prepare a delicious Mexican Elote-Inspired Salad.

Ingredients

  • 4 cups of fresh corn kernels (about 4 ears of corn or 2 cans of corn, drained)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, finely chopped (optional, depending on spice preference)
  • 1/2 cup of crumbled cotija cheese (or feta cheese as a substitute)
  • 1/4 cup of fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons of mayonnaise
  • 1 teaspoon of chili powder
  • Salt and pepper to taste

Instructions

Step 1: Start by cooking the corn. If using fresh corn, grill the corn on high heat for about 10 minutes until charred. Allow it to cool slightly, then cut the kernels off the cob. If you're using canned corn, simply drain and rinse it well.

Step 2: In a large mixing bowl, combine the corn kernels, diced red bell pepper, chopped red onion, and jalapeño (if using). Gently mix the ingredients together to ensure even distribution.

Step 3: In a separate small bowl, whisk together the lime juice, mayonnaise, chili powder, salt, and pepper until well combined. This dressing will bring all the flavors together beautifully.

Step 4: Pour the dressing over the corn mixture and toss gently to coat all the ingredients evenly. Be careful not to mash the corn kernels.

Step 5: Add in the crumbled cotija cheese and chopped cilantro, and give the salad one last gentle toss to mix everything together without breaking up the cheese.

Step 6: Taste the salad and adjust any seasonings as necessary. If you prefer a little more kick, feel free to add extra chili powder or jalapeño.

Step 7: Let the salad sit for about 10-15 minutes to allow the flavors to meld. This dish can be served warm, at room temperature, or chilled from the refrigerator.

Serving Suggestions

This Mexican Elote-Inspired Salad can be enjoyed on its own or as a vibrant side dish to accompany grilled meats, tacos, or burritos. It also makes for a fantastic topping on nachos or as a filling in wraps. Plus, it’s an excellent way to incorporate fresh ingredients into your meals!

Storage Tips

If you have leftovers, store the salad in an airtight container in the refrigerator for up to two days. Note that the corn may lose some of its crispness over time, but the flavors will continue to evolve and deepen.

Creating a Mexican Elote-Inspired Salad is a fantastic way to celebrate the fresh and bold flavors of Mexican cuisine. Give this recipe a try and enjoy the delightful combination of sweet corn, spicy jalapeños, and creamy dressing!
