Ingredients

  • 1 can of black beans (15 oz), rinsed and drained
  • 1 cup of sweet corn (fresh or canned)
  • 1 tablespoon of olive oil
  • 1 teaspoon of ground cumin
  • 1 teaspoon of chili powder
  • ½ teaspoon of smoked paprika
  • 1 jalapeño pepper, finely chopped (adjust for spice level)
  • ½ cup of diced red onion
  • 1 tablespoon of lime juice
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • Fresh cilantro for garnish
  • Avocado slices or guacamole (optional)

Instructions

Step 1: In a large skillet, heat the olive oil over medium heat. Add the diced red onion and jalapeño pepper. Sauté for about 3-4 minutes until they are softened.

Step 2: Stir in the drained black beans and corn to the skillet. Add the ground cumin, chili powder, smoked paprika, lime juice, salt, and pepper. Mix well and cook for another 5-7 minutes, allowing the flavors to meld and the mixture to heat through.

Step 3: Meanwhile, warm the tortillas in a separate pan or directly over the flame of a gas stove for a few seconds on each side until they are soft and pliable.

Step 4: To assemble the tacos, spoon the black bean and corn mixture onto each tortilla. Top with fresh cilantro and optional avocado slices or guacamole for added creaminess.

Step 5: Serve immediately and enjoy your tasty Mexican spicy black bean and corn tacos!

Serving Suggestions

These tacos pair wonderfully with a side of Mexican rice or a fresh salad. You can also offer a variety of toppings such as salsa, sour cream, or shredded cheese to enhance the flavor even further.
