Instructions

Step 1: Roast the Beets

Preheat your oven to 400°F (200°C). Start by washing the beets thoroughly to remove any dirt. Wrap each beet individually in aluminum foil, drizzle with olive oil, and sprinkle with salt. Place the wrapped beets on a baking sheet and roast in the preheated oven for about 45-60 minutes or until they are fork-tender. Once done, let them cool, then peel off the skins and cut them into cubes.

Step 2: Prepare the Salad Ingredients

While the beets are roasting, prepare the other salad ingredients. Dice the avocados, thinly slice the red onion, and halve the cherry tomatoes. In a large mixing bowl, combine the diced avocados, sliced onion, halved tomatoes, and chopped cilantro.
