Ingredients

To make traditional Mexican meat pozole, you will need the following ingredients:

  • 2 pounds of pork shoulder (or chicken, if preferred)
  • 1 cup of dried hominy (or canned hominy for a quicker option)
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 6 cups of water (or chicken broth for added flavor)
  • 2-3 dried ancho chilies or guajillo chilies
  • 2 teaspoons of oregano (preferably Mexican oregano)

Instructions

Step 1: Prepare the Hominy

If you're using dried hominy, rinse it under cold water and then soak it overnight in plenty of water. This softens the kernels and helps them cook more uniformly. If you’re using canned hominy, simply drain and rinse it before adding it to the soup later.

Step 2: Cook the Meat

In a large pot, add the pork shoulder (or chicken), diced onion, minced garlic, and water (or broth). Bring to a boil over medium-high heat, then reduce to a simmer. Cook the meat for about 1-2 hours or until it is tender and easily pulls apart with a fork.

Step 3: Prepare the Chili Sauce

While the meat is cooking, prepare the chili sauce. In a separate pot, bring water to a boil and add the dried chilies. Allow them to simmer for about 10-15 minutes until softened. Remove the chilies from the water, and blend them with a little bit of the cooking liquid until smooth. Set the sauce aside.

Step 4: Combine Ingredients

Once the meat is cooked, remove it from the pot and shred it using two forks. Discard any excess fat and bones. Return the shredded meat to the pot, then add the soaked (or canned) hominy, chili sauce, oregano, and salt. Stir well to combine.

Step 5: Simmer

Continue to simmer the pozole on low heat for another 30-45 minutes. This allows the flavors to meld together beautifully. Taste and adjust the seasoning if necessary.

Step 6: Serve

Using a ladle, serve the pozole into bowls. Garnish with fresh lime wedges, chopped radishes, shredded cabbage, and diced avocado for a burst of freshness. Enjoy this authentic dish with your friends and family!
