  • 3 pounds beef chuck or brisket

Instructions

Step 1: Prepare the Marinade

In a blender, combine the minced garlic, cumin, oregano, black pepper, chipotle peppers, onion, beef broth, and apple cider vinegar. Blend until smooth to create a flavorful marinade.

Step 2: Marinate the Beef

Place the beef chuck or brisket in a large bowl and pour the marinade over it. Make sure the meat is well coated. Cover the bowl and let it marinate in the refrigerator for at least 2 hours, or preferably overnight. This step is crucial for infusing the meat with flavor.

Step 3: Slow Cook the Meat

After marinating, remove the beef from the refrigerator. Transfer the meat, along with the marinade and bay leaves, to a slow cooker or a Dutch oven. If using a slow cooker, set it on low for about 8 hours. If using a Dutch oven, preheat your oven to 300°F (150°C) and cook for about 4 hours until the meat is tender and easily shreds with a fork.

Step 4: Shred the Beef

Once the beef is cooked, remove it from the cooker and let it cool slightly. Shred the meat using two forks, discarding any excess fat. Mix the shredded beef back into the cooking juices to soak up more flavor.

Step 5: Serve

To serve, warm tortillas on a skillet or grill. Spoon the shredded barbacoa onto the tortillas and garnish with fresh cilantro and a squeeze of lime juice. This dish pairs wonderfully with rice, beans, and your favorite salsa.
