How to Make Traditional Mexican Chocolate Rice Pudding

Traditional Mexican chocolate rice pudding, or "Arroz con Chocolate," is a delightful dessert that blends the creaminess of rice pudding with the rich flavors of chocolate and spices. This comforting dish is perfect for any occasion and is sure to satisfy your sweet tooth. Follow this simple recipe to create your own delicious version at home.

Ingredients

  • 1 cup of long-grain rice
  • 2 ½ cups of whole milk
  • ½ cup of sugar (adjust to taste)
  • 1 cup of dark chocolate, chopped (preferably Mexican chocolate)
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of cinnamon powder
  • A pinch of salt
  • Optional toppings: whipped cream, chocolate shavings, or chopped nuts

Instructions

Step 1: Prepare the Rice

To begin, rinse the rice under cold water in a fine-mesh strainer until the water runs clear. This step removes excess starch and helps achieve a creamy texture in your pudding. Drain well and set aside.

Step 2: Cook the Rice

In a medium saucepan, combine the rinsed rice and 2 cups of the milk. Add a pinch of salt and bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes, stirring occasionally to prevent sticking.

Step 3: Incorporate Chocolate and Spices

After the rice is tender and most of the milk has been absorbed, add the remaining ½ cup of milk, sugar, cinnamon, and chopped dark chocolate to the saucepan. Stir well to combine all the ingredients, and continue to cook for an additional 5 minutes over low heat until the chocolate is fully melted and the pudding reaches your desired consistency. If you prefer a creamier pudding, you can add more milk.

Step 4: Add Vanilla

Remove the saucepan from heat and stir in the vanilla extract. Taste the pudding and adjust the sweetness or chocolate level by adding more sugar or chocolate, if desired.

Step 5: Serve and Enjoy

Serve the traditional Mexican chocolate rice pudding warm or chilled, depending on your preference. You can top it with whipped cream, chocolate shavings, or chopped nuts for added texture and flavor. This dish also pairs beautifully with a sprinkle of cinnamon on top.

Tips for the Perfect Chocolate Rice Pudding

  • For an even richer flavor, consider using a mix of dark and milk chocolate.
  • Experiment with spices like nutmeg or a dash of chili powder for a unique twist.
  • If you want a healthier option, substitute regular milk with almond or oat milk.
  • Letting the pudding sit in the refrigerator for a few hours allows the flavors to deepen.

This traditional Mexican chocolate rice pudding is a beloved treat that captures the essence of Mexican cuisine. Not only is it easy to make, but it's also a dish that brings warmth and comfort to the table. Whether you're celebrating a special occasion or simply want to indulge in a sweet dessert, this recipe will surely impress your family and friends.
