  2. Warm the tortillas on a skillet for a few seconds on each side.
  3. Fill each tortilla with a mixture of black beans and cheese, then roll them up.
  4. Place the rolled enchiladas in a baking dish, cover with red chili sauce, and sprinkle remaining cheese on top.
  5. Bake for about 20 minutes, until the cheese is melted and bubbly.

2. Chiles Rellenos

Chiles Rellenos are another classic Mexican dish that can easily be made vegetarian. For this recipe, you'll need:

  • 4 poblano peppers
  • 1 cup of cheese (feta, queso fresco, or mozzarella)
  • 1/2 cup of flour
  • 3 eggs
  • 1 cup of tomato sauce

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Roast the poblano peppers until their skin is charred. Place them in a plastic bag for 10 minutes to steam, then peel off the skin.
  3. Stuff each pepper with the cheese.
  4. Separate the egg whites and yolks. Beat the egg whites until stiff peaks form, then fold in the yolks gently.
  5. Dip each stuffed pepper in flour and then coat with the egg mixture. Fry in a skillet until golden brown.
  6. Place the chiles in a baking dish, cover with tomato sauce, and bake for about 15 minutes. Serve warm.

3. Vegetarian Tacos

  • 2 cups masa harina
  • 1 cup water
  • 1 cup cooked and diced nopales
  • 1/2 cup refried beans
  • Cheese and salsa for topping

Instructions:

  1. Mix masa harina with water to form a dough. Shape small patties and slightly press down the edges to form a small wall.
  2. Cook the sopes on a hot skillet until golden brown
