How to Make a Traditional Mexican Sweet Potato and Black Bean Taco

Tacos are a beloved staple of Mexican cuisine, and one delightful variation is the traditional sweet potato and black bean taco. Packed with flavor and nutrients, this dish offers a unique twist on the classic taco. Follow this simple recipe to create a delicious meal that everyone will enjoy.

Ingredients

  • 2 medium sweet potatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 8 small corn tortillas
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)
  • Avocado slices (optional)
  • Feta cheese or Cotija cheese (optional)

Instructions

Step 1: Prepare the Sweet Potatoes

Start by preheating your oven to 400°F (200°C). Peel the sweet potatoes and cut them into small cubes. Place the cubed sweet potatoes on a baking sheet, drizzle olive oil over them, and sprinkle with cumin, chili powder, salt, and pepper. Toss them to coat evenly.

Step 2: Roast the Sweet Potatoes

Spread the sweet potatoes out in a single layer on the baking sheet and roast in the preheated oven for about 25-30 minutes, or until they are tender and slightly caramelized. Stir them halfway through cooking to ensure even roasting.

Step 3: Prepare the Black Beans

While the sweet potatoes are roasting, heat a small pot over medium heat. Add the rinsed black beans, and season with salt, pepper, and a pinch of cumin. Cook for about 5-7 minutes, stirring occasionally until heated through.

Step 4: Warm the Tortillas

To warm the corn tortillas, you can use a dry skillet over medium heat. Toast them for about 30 seconds on each side until they are pliable and fragrant.

Step 5: Assemble the Tacos

Once the sweet potatoes and black beans are ready, it is time to assemble your tacos. Start by placing a generous spoonful of black beans on each tortilla, followed by a scoop of roasted sweet potatoes. Add fresh cilantro, avocado slices, and crumbled cheese if desired.

Step 6: Serve and Enjoy

Serve your sweet potato and black bean tacos with lime wedges on the side for an extra burst of flavor. Enjoy them fresh and hot!

Tips for a Perfect Taco Experience

  • Feel free to customize your tacos with toppings like salsa, guacamole, or hot sauce for added flavor.
  • You can also add other vegetables, like sautéed bell peppers or onions, for more depth.
  • These tacos are great for meal prep. Simply store the components separately and assemble when ready to eat.

Making traditional Mexican sweet potato and black bean tacos is a delightful cooking experience that results in a flavorful, healthy meal. Perfect for any occasion, these tacos will leave your family and friends asking for seconds!
