  • 2 medium chayotes, peeled and diced
  • 1 can (15 oz) of black beans, rinsed and drained

  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish

Instructions

Step 1: Prepare the Ingredients

Start by preheating your oven to 375°F (190°C). While the oven is heating, take the time to prepare your ingredients. Peel and dice the chayotes into bite-sized pieces, chop the onion, and mince the garlic. Rinse and drain the black beans and drain the diced tomatoes.

Step 2: Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent. Then, add the minced garlic and cook for another minute, stirring frequently to avoid burning.

Step 3: Combine the Ingredients

To the skillet, add the diced chayote, black beans, corn, drained tomatoes, cumin, chili powder, paprika, salt, and pepper. Stir everything together and let the mixture simmer for about 5-7 minutes, allowing the flavors to meld together.
