Cooking a vibrant and delicious Mexican cactus and onion stir-fry is a fantastic way to explore unique flavors while incorporating healthy ingredients.   • 1 cup of diced nopal cactus (fresh or canned)
  • 1 medium onion, thinly sliced

  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

Step 1: Prepare the Cactus
If you are using fresh nopal cactus, rinse it thoroughly to remove any dirt. Carefully remove the spines with a knife and chop the cactus into bite-sized pieces. If you are using canned cactus, drain and rinse it well to reduce the saltiness.

Step 2: Sauté the Onion
In a large skillet, heat the olive oil over medium heat. Add the sliced onion and sauté for about 5 minutes, or until it becomes translucent and starts to caramelize.

Step 3: Add Garlic and Spices
Stir in the minced garlic, ground cumin, and chili powder. Cook for an additional minute, allowing the spices to release their fragrances.

Step 4: Incorporate Cactus
Add the prepared cactus to the skillet. Mix well with the onion and spices, then season with salt and pepper to taste. Cook for another 5-7 minutes, stirring frequently until the cactus is tender and begins to brown slightly.

Step 5: Garnish and Serve
Once cooked, remove the skillet from heat. Garnish the stir-fry with chopped fresh cilantro and serve it warm with lime wedges on the side, adding a zesty kick to your dish.
