Instructions

1. Prepare the Tomatoes:
Start by boiling the tomatoes for about 5-7 minutes in a pot of water until their skins start to crack. Remove them from the heat and rinse under cold water. Peel the skins and chop the tomatoes.

2. Sauté the Vegetables:
In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion, and sauté until translucent (about 5 minutes). Add in the minced garlic and chopped jalapeños, cooking for an additional 2 minutes.

3. Create the Base:
Stir in the chopped tomatoes, ground cumin, chili powder, and salt. Cook the mixture for about 5 minutes to allow the flavors to meld together.

4. Add the Broth:
Pour in the vegetable or chicken broth and bring the soup to a boil. Once boiling, reduce the heat and let it simmer for 15-20 minutes.

5. Blend for Creaminess (Optional):
If you prefer a smoother texture, use an immersion blender to blend the soup until smooth, or transfer it in batches to a blender and blend, then return to the pot.

6. Serve the Soup:
To serve, ladle the soup into bowls and top each with a handful of tortilla chips, diced avocado, and fresh cilantro. Squeeze lime juice over the top for an extra burst of flavor.
