  • 1 can (14.5 ounces) diced tomatoes with green chilies
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Instructions

Step 1: In a large pot, heat the olive oil over medium heat. Add the chorizo sausage and cook until browned, breaking it apart with a wooden spoon, about 5 minutes.

Step 2: Add the diced onion, garlic, and bell pepper to the pot. Sauté until the vegetables are softened, approximately 3 to 4 minutes.

Step 3: Stir in the rinsed black beans, chicken or vegetable broth, diced tomatoes with green chilies, cumin, chili powder, salt, and pepper. Bring the mixture to a boil over medium-high heat.

Step 4: Once boiling, reduce the heat to low. Let the soup simmer for about 20 minutes, allowing the flavors to meld together.

Step 5: Taste the soup and adjust the seasoning if necessary. If you prefer a thicker consistency, you can mash some of the black beans with a fork.
