How to Make a Mexican Beef and Vegetable Soup

Ingredients

  • 1 pound of beef (chuck or brisket), cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper (any color), chopped
  • 2 medium potatoes, peeled and diced
  • 1 cup corn (fresh, frozen, or canned)
  • 1 can (14 oz) diced tomatoes
  • 4 cups beef broth
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the beef pieces and brown them on all sides, which will take about 5-7 minutes.

2. Once the beef is browned, add the chopped onion and minced garlic to the pot. Sauté for about 3-4 minutes until the onion becomes translucent.

3. Add the diced carrots, celery, and bell pepper to the pot. Stir well and cook for another 5 minutes, allowing the vegetables to soften.

4. Next, add the diced potatoes, corn, and canned tomatoes (with their juices) to the pot. Stir to combine all ingredients.

5. Pour in the beef broth and mix well. Bring the soup to a boil.

6. Once boiling, reduce the heat to a simmer. Add cumin, chili powder, salt, and pepper. Cover the pot and let it simmer for about 30-40 minutes, or until the beef is tender and the vegetables are cooked through.

7. Taste and adjust the seasoning if necessary. If you prefer a spicier soup, feel free to add some diced jalapeños or cayenne pepper.

8. Serve the soup in bowls, garnished with fresh cilantro. Add a lime wedge on the side for an extra burst of flavor.
