How to Make Mexican Seafood with a Creamy Sauce

If you're looking to elevate your culinary skills, making Mexican seafood with a creamy sauce is a delicious option that combines vibrant flavors and rich textures. This dish is perfect for impressing guests or enjoying a cozy meal at home. Follow this simple guide to create a delightful Mexican seafood experience.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb scallops
  • 1 lb fish fillets (like tilapia or mahi-mahi)
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Jalapeño slices (optional, for heat)

Instructions

Step 1: Prepare the Seafood

Start by rinsing the shrimp, scallops, and fish fillets under cold water. Pat them dry with paper towels. Season with salt and pepper, then set aside.

Step 2: Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes until it becomes translucent. Add the minced garlic, diced red and green bell peppers, and corn, and cook for an additional 5 minutes until the vegetables are tender.

Step 3: Cook the Seafood

Carefully add the shrimp, scallops, and fish fillets to the skillet. Cook for about 5-7 minutes, stirring gently until the seafood is cooked through and opaque. Be careful not to overcook the seafood, as it could become tough and rubbery.

Step 4: Make the Creamy Sauce

Pour in the chicken broth and bring it to a simmer. Reduce the heat slightly and add the heavy cream, stirring well to combine. Let the sauce simmer for about 3-4 minutes until it thickens slightly. Add lime juice for a fresh zing and adjust seasoning with salt and pepper to taste.

Step 5: Serve and Enjoy

Once the sauce has thickened and the seafood is coated, remove from heat. Serve the Mexican seafood with creamy sauce over a bed of rice or with warm tortillas. Garnish with fresh cilantro and, if desired, some jalapeño slices for an extra kick.

Tips for the Perfect Mexican Seafood Dish

  • Feel free to substitute or add other seafood like mussels or clams.
  • Use low-fat alternatives for the heavy cream if you’re looking to lighten the dish.
  • Pair with a refreshing salad or Mexican rice for a complete meal.

This Mexican seafood with a creamy sauce promises to be a hit at your dinner table. With a combination of fresh ingredients and robust flavors, you'll find that this dish not only satisfies your taste buds but also makes for a stunning presentation. Enjoy your culinary adventure!
