  • Tortilla chips or tostadas (for serving)

Instructions

Step 1: Begin by preparing the fish. Place the diced fish in a glass or ceramic bowl. Pour the freshly squeezed lime juice over the fish, ensuring that the pieces are completely submerged. The acidity in the lime juice will 'cook' the fish. Cover the bowl with plastic wrap and place it in the refrigerator for about 1 to 2 hours, or until the fish is opaque and firm to the touch.

Step 2: While the fish is marinating, chop the vegetables. In a separate bowl, combine the finely chopped red onion, diced tomato, cucumber, and jalapeño peppers. Mix well and set aside.

Step 3: Once the fish is ready, remove it from the refrigerator and drain off some of the lime juice, leaving enough to add flavor without drowning the dish. Gently fold in the vegetable mixture and chopped cilantro. Season with salt and pepper to taste.

Step 4: Allow the ceviche to marinate for an additional 15-30 minutes in the refrigerator to meld the flavors. This step adds depth to the dish and enhances its freshness.

Step 5: Serve the traditional Mexican ceviche chilled. Garnish with avocado slices on top and accompany it with tortilla chips or tostadas for a delightful crunch.
