How to Make Mexican Sauces with Tomatillos

Tomatillos are a vibrant green fruit that plays a crucial role in Mexican cuisine. Known for their tart flavor and unique texture, they are a versatile ingredient ideal for various sauces. 1. Tomatillo Salsa Verde

Ingredients:

  • 1 pound tomatillos, husked and rinsed
  • 1/2 medium onion, chopped
  • 2 cloves garlic, minced
  • 1-2 jalapeños or serrano peppers, seeded and chopped (adjust to taste)
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste

Instructions:

  1. Boil the tomatillos in a pot of water for about 10 minutes until they are tender and their skin is dull.
  2. Drain and let cool slightly.
  3. In a blender, combine the tomatillos, onion, garlic, and peppers. Blend until smooth.
  4. Add the cilantro and salt, and pulse until combined.
  5. Serve immediately, or refrigerate for up to a week.

2. Roasted Tomatillo Sauce

Ingredients:

  • 1 pound tomatillos, husked
  • 1-2 jalapeños, halved (adjust to taste)

Instructions:

  1. Preheat your oven to 400°F (200°C).
