3. Blend the Ingredients:

Once the vegetables are roasted, let them cool slightly. Peel the skins off the tomatoes and garlic, if desired. In a blender or food processor, combine the roasted tomatoes, jalapeños, onion, garlic, chopped cilantro, and lime juice. Blend until you achieve your desired consistency—chunky or smooth.

4. Season to Taste:

After blending, taste your salsa roja and add salt as needed. For extra heat, consider adding more jalapeño or a habanero pepper. Blend again briefly if you mix in additional ingredients.

5. Chill and Serve:

Transfer your salsa to a bowl and let it chill in the refrigerator for at least an hour. This allows the flavors to meld together beautifully. Serve your spicy salsa roja with tortilla chips, as a topping for tacos, or alongside grilled meats for a flavorful kick.

Storage:

Store any leftover salsa roja in an airtight container in the refrigerator for up to one week. You can also freeze it for a longer shelf life—just ensure it’s in a freezer-safe container.
