How to Make a Spicy Mexican Salsa Roja

Making a spicy Mexican salsa roja is a simple yet rewarding endeavor that brings the vibrant flavors of Mexico right to your kitchen. Whether you’re serving it with tortilla chips, tacos, or grilled meats, this salsa is sure to be a crowd-pleaser!

Ingredients:

  • 6 ripe tomatoes
  • 2-3 jalapeño peppers (adjust based on your spice preference)
  • 1 small onion, quartered
  • 2 cloves of garlic
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt, to taste
  • Optional: 1-2 habanero peppers for extra heat

Instructions:

1. Roast the Vegetables:

Start by preheating your oven to 450°F (230°C). Place the tomatoes, jalapeños, and onion on a baking sheet. Roast them for about 20 minutes, or until the skins are blistered and charred. This step adds depth and smokiness to your salsa.

2. Char the Garlic:

Wrap the garlic cloves in aluminum foil and place them on the baking sheet during the last 10 minutes of roasting. This will soften the garlic and enhance its flavor.

3. Blend the Ingredients:

Once the vegetables are roasted, let them cool slightly. Peel the skins off the tomatoes and garlic, if desired. In a blender or food processor, combine the roasted tomatoes, jalapeños, onion, garlic, chopped cilantro, and lime juice. Blend until you achieve your desired consistency—chunky or smooth.

4. Season to Taste:

After blending, taste your salsa roja and add salt as needed. For extra heat, consider adding more jalapeño or a habanero pepper. Blend again briefly if you mix in additional ingredients.

5. Chill and Serve:

Transfer your salsa to a bowl and let it chill in the refrigerator for at least an hour. This allows the flavors to meld together beautifully. Serve your spicy salsa roja with tortilla chips, as a topping for tacos, or alongside grilled meats for a flavorful kick.

Storage:

Store any leftover salsa roja in an airtight container in the refrigerator for up to one week. You can also freeze it for a longer shelf life—just ensure it’s in a freezer-safe container.

Enjoy the zest and heat of this authentic spicy Mexican salsa roja, perfect for any occasion!
