  • 1 cup brown or green lentils, rinsed

  • 1 medium onion, diced

  • 1 carrot, diced
  • 1 bell pepper (any color), diced
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 6 cups vegetable broth or water
  • 1 (14.5 oz) can diced tomatoes
  • 1 can corn, drained (optional)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions:

Step 1: In a large pot, heat the olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes. Stir in minced garlic, diced carrot, and bell pepper, cooking for an additional 2-3 minutes until softened.

Step 2: Sprinkle in the ground cumin and chili powder, stirring to coat the vegetables. These spices are what give the soup its authentic Mexican flavor.

Step 3: Add the rinsed lentils, vegetable broth (or water), and canned diced tomatoes (with their juices) to the pot. If using, add the corn as well. Stir everything together and bring the mixture to a boil.

Step 4: Once boiling, reduce the heat to low and cover the pot. Let the soup simmer for about 25-30 minutes, or until the lentils are tender. Stir occasionally and add more broth or water if the soup becomes too thick.

Step 5: Season the soup with salt and pepper to taste. If desired, you can also add a squeeze of lime juice for a hint of acidity.

Step 6: Serve the lentil soup hot, garnished with fresh cilantro and alongside lime wedges for an extra burst of flavor.
