Authentic Green Chile Enchiladas

Green chile enchiladas are a beloved Mexican dish that showcases the rich and vibrant flavors of green chilies combined with tender meats, gooey cheese, and soft tortillas. This authentic recipe stays true to tradition while delivering a taste experience that will tantalize your taste buds.

Ingredients:

- 1 pound boneless, skinless chicken breast - 1 can (28 oz) green enchilada sauce - 1 can (4 oz) diced green chilies, drained - 1 small onion, finely chopped - 2 cloves garlic, minced - 1 teaspoon ground cumin - 1 teaspoon chili powder - Salt and pepper to taste - 12 corn tortillas - 2 cups shredded Monterey Jack or Cheddar cheese - Chopped fresh cilantro, for garnish - Sour cream and sliced avocado, for serving

Instructions:

1. Preheat the oven to 350°F (175°C).

2. In a large skillet, cook the chicken breast over medium heat until fully cooked. Shred the chicken using two forks and set aside.

3. In the same skillet, add the chopped onion and garlic. Cook until softened, about 3-4 minutes.

4. Add the shredded chicken back to the skillet. Stir in the diced green chilies, ground cumin, chili powder, salt, and pepper. Cook for an additional 5 minutes.

5. Pour about 1/2 cup of the green enchilada sauce into a 9x13-inch baking dish, spreading it evenly on the bottom.

6. Warm the corn tortillas in the microwave for a few seconds to make them pliable. Spoon a portion of the chicken mixture onto each tortilla, roll it up, and place it seam-side down in the baking dish.

7. Once all the enchiladas are assembled, pour the remaining green enchilada sauce over the top, making sure to coat each enchilada.

8. Sprinkle the shredded cheese over the enchiladas, covering them completely.

9. Cover the dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

10. Remove from the oven and let the enchiladas rest for a few minutes before serving.

11. Garnish with chopped cilantro and serve with a dollop of sour cream and sliced avocado on the side.
