How to Make Mexican Salads with Charred Corn

Mexican salads are vibrant and packed with flavor, making them a perfect choice for light meals or sides. One ingredient that takes these salads to the next level is charred corn. The smoky sweetness of the corn complements traditional Mexican flavors beautifully. Here’s how to make delectable Mexican salads featuring charred corn.

Ingredients

  • 2 cups fresh corn kernels (or 2 cans of corn, drained)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1 avocado, diced
  • 1 cup black beans, rinsed and drained
  • 1/2 cup cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon chili powder (optional)

Instructions

Step 1: Char the Corn

Start by charring the corn. If using fresh corn, you can remove the kernels from the cob. Heat a grill or a grill pan over medium-high heat. Add the corn and cook, turning occasionally, until it gets a nice char (about 5-7 minutes). If you're using canned corn, you can dry roast it in a skillet for about 5 minutes. Allow the corn to cool before combining it with the other salad ingredients.

Step 2: Prepare the Vegetables

While the corn is cooling, chop your vegetables. Dice the red and green bell peppers, halve the cherry tomatoes, and finely chop the red onion. Dice the avocado, and be sure to toss it in lime juice to prevent browning.

Step 3: Combine the Ingredients

In a large mixing bowl, combine the charred corn, bell peppers, cherry tomatoes, red onion, diced avocado, and black beans. Add the chopped cilantro for a fresh touch, and sprinkle in the chili powder if you like a little heat.

Step 4: Dress the Salad

In a small bowl, whisk together the lime juice and olive oil. Pour this dressing over the salad mixture, and gently toss to coat all the ingredients evenly. Season with salt and pepper to taste.

Serving Suggestions

This Mexican salad can be served cold or at room temperature, making it a versatile dish for any occasion. Serve it as a side dish to grilled meat or fish, or enjoy it as a light main course. For added protein, consider topping the salad with grilled chicken or shrimp.

Variations and Tips

Feel free to customize your Mexican salad by adding other ingredients such as diced jalapeños for heat, or crumbled queso fresco for a creamy texture. You can also substitute the black beans with kidney beans or chickpeas, depending on your preference.

Incorporating charred corn into your Mexican salads not only enhances their flavor but also adds a delightful smokiness that is sure to impress. Enjoy preparing this colorful, healthy dish that transports your taste buds straight to Mexico!
