Step 2: Shape the Sopes

Divide the dough into golf ball-sized portions. Roll each portion into a ball, then flatten it to about 1/4 inch thick to create disks. Use your fingers to pinch the edges of each disk to form a small border, which will hold the toppings.

Step 3: Cook the Sopes

Heat a skillet over medium heat and add the vegetable oil. Once hot, place the sopes in the skillet and cook for about 2-3 minutes on each side, until they have a light golden color. Remove them from the skillet and let them drain on paper towels to absorb any excess oil.

Step 4: Assemble the Sopes

Spread a layer of refried beans on each sop. Top with a generous portion of shredded chicken. Add shredded lettuce and diced tomatoes for freshness. Finally, sprinkle crumbled queso fresco on top and drizzle with sour cream.
