  • 2 cups cooked shredded chicken (or turkey)

  • 8 corn or flour tortillas

  • 1 small onion, diced
  • 1 cup diced bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin

Preparation Steps

Step 1: Prepare the Filling

In a skillet, heat the olive oil over medium heat. Add the diced onion and bell peppers, cooking until they are soft and fragrant, about 5 minutes. Stir in the shredded chicken, ground cumin, salt, and pepper, cooking for an additional 2-3 minutes to blend the flavors.

Step 2: Assemble the Enchiladas

Preheat your oven to 350°F (175°C). Take a tortilla, add a generous spoonful of the chicken mixture to the center, and roll it up tightly. Repeat this process with the remaining tortillas and filling.

Step 3: Arrange in Baking Dish

Spread ½ cup of enchilada sauce on the bottom of a greased 9x13 inch baking dish. Place the rolled enchiladas seam-side down in the dish. Pour the remaining enchilada sauce over the top of the assembled enchiladas, ensuring they are well-coated.

Step 4: Add Cheese

Sprinkle the shredded cheese evenly over the top of the enchiladas. This will create a delicious cheesy crust once baked.

Step 5: Bake

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. After that, remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
