Simple Mexican Dinner Enchiladas Verdes

Enchiladas Verdes are a delicious and popular Mexican dish that can easily be made at home. This simple recipe features soft corn tortillas filled with a savory mixture of chicken and cheese, all smothered in a vibrant green tomatillo sauce. Perfect for a quick weeknight dinner, these enchiladas are sure to please the whole family.

Ingredients

  • 12 corn tortillas
  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese (such as Monterey Jack or queso fresco)
  • 2 cups tomatillos, husked and chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Cilantro for garnish, optional
  • Sour cream for serving, optional

Instructions

Step 1: Prepare the Tomatillo Sauce

In a medium pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes.

Add the tomatillos and cumin to the pot, seasoning with salt and pepper. Cook for another 5-7 minutes until the tomatillos are soft and have released their juices. Use an immersion blender or a regular blender to puree the sauce until smooth. Set aside.

Step 2: Assemble the Enchiladas

Preheat your oven to 375°F (190°C). In a baking dish, spread a thin layer of the tomatillo sauce on the bottom. Take a tortilla, fill it with a mixture of shredded chicken and cheese, and roll it up tightly. Place the rolled enchilada seam-side down in the baking dish. Repeat with the remaining tortillas.

Step 3: Bake the Enchiladas

Once all enchiladas are in the dish, pour the remaining tomatillo sauce over the top, ensuring all enchiladas are well-covered. Sprinkle additional cheese on top for extra flavor. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Step 4: Serve

Remove the enchiladas from the oven and let them cool for a few minutes. Garnish with fresh cilantro if desired, and serve with a dollop of sour cream on the side. Pair these enchiladas with a fresh salad or Mexican rice for a complete meal.
