  • Edible wafer paper (optional)

Instructions

Step 1: Prepare the Nuts

Start by lightly toasting the almonds in a pan over medium heat for about 5-7 minutes. Stir them frequently to ensure they are evenly toasted and fragrant. Once done, set them aside to cool.

Step 2: Make the Syrup

In a saucepan, combine sugar, honey, and water. Bring to a boil over medium heat, stirring until the sugar dissolves completely. Once boiling, reduce the heat and let it simmer for about 8-10 minutes, or until the mixture reaches a golden color. Use a candy thermometer to check the temperature—it should reach approximately 240°F (soft-ball stage).

Step 3: Mix Ingredients

Once the syrup is ready, carefully remove it from the heat. Stir in the vanilla extract and salt immediately. Then, add the toasted almonds to the mixture, ensuring that they are well coated with the syrup.

Step 4: Shape the Turrón

If you are using wafer paper, line a rectangular baking dish with it. Pour the nut mixture into the dish and spread it evenly using a spatula. If you’re not using wafer paper, simply grease the dish lightly before pouring in the mixture. Compress it down firmly to ensure that it holds its shape once it cools.

Step 5: Cool and Cut

Allow the turrón to cool completely at room temperature for at least 4 hours, or until it is firm. Once set, remove it from the dish by lifting out the wafer paper or using a knife to loosen the edges. Cut the turrón into rectangular or square pieces. Store them in an airtight container.
