Instructions

Step 1: Prepare the Tamarind

If you are starting with tamarind pods, first, remove the outer shell and soak the pulp in warm water for about 30 minutes. This will soften the tamarind and make it easier to separate the pulp from the seeds. If you have tamarind pulp, you can skip this step.

Step 2: Extract the Tamarind Flavor

In a blender, combine the soaked tamarind pulp and the 4 cups of water. Blend until smooth. If using tamarind pods, make sure to remove any seeds from the mixture.

Step 3: Strain the Mixture

Using a fine mesh strainer or cheesecloth, strain the blended mixture into a large pitcher. Use the back of a spoon to press down and extract as much liquid as possible, leaving behind the fibrous pulp.

Step 4: Sweeten the Drink

Add sugar to the strained tamarind liquid and stir until fully dissolved. Start with half a cup and adjust according to your taste preference. You can also add a pinch of salt to enhance the flavor.

Step 5: Chill and Serve
